SPELT BREAD

I've been really lazy with these blog posts recently, so I've decided to be a little more dedicated to this noble profession once again!See how long this lasts 
Now spelt bread is wonderful. Have you tried it??? You can buy spelt flour at a very reasonable price in most supermarkets in the UK these days. Aldi seems to be the cheapest currently and the Pantry do really great spelt flour. AND spelt flour is higher in minerals and vitamins than typical wheat flours. It aids blood flow, increases immunity to infections, reduces high blood pressure and builds strong bones. Added bonus!
















 




Anyhow I wanted to share the recipe because it's super easy and fantastically delicious. Nutty, with a lovely chewy texture but light and moreish at the same time. Forget shop bought or even some of the supermarket bakery bread. You really can't beat home baked bread. And this doesn't even need kneading! Just leave it to do its thing and go out and enjoy yourself, whilst thinking about that wonderful loaf in the making!
Recipe
500g spelt flour (either white or half white / half wholemeal but white is best for me)
350g warm water (not too hot, just luke warm water)
1 tsp dried active yeast
1 tsp fine sea salt
2 tbsp golden syrup (or any other sweet viscous ingredient)
I like to add a handful of linseeds, pumpkin seeds and sesame seeds into the dough
Method
In a bowl add the water, yeast and syrup. Mix with a whisk and leave to stand for ten minutes. To this bowl add the remaining ingredients and mix with a wooden spoon, making sure all the ingredients are well combined.
Place the dough in a greased baking tin with enough room to allow it to double in size. Cover the tin inside a large plastic bag making sure it will not touch the dough as it rises. Leave for a few hours in a warm place until it has doubled in size.
Bake in a pre heated oven at 190°C fan assisted oven for 35 minutes. Remove from the tin and leave to cool on a wire rack. I defy you to not LOVE this loaf. Artisan bakers....HERE WE COME!
